Restaurant Dropout x Jenn Luekefeaturing Lemon Chicken Thighs and Rice, Sweet and Spicy Tofu and Broccolini, and moreA couple years ago, I crossed paths with Jenn Lueke (you likely know her as jenneatsgoood). In our initial brief interactions, I quickly learned that we share a similar wavelength in the kitchen—she is equally passionate about stretching one grocery haul into a week of meals. Like Restaurant Dropout, The Jenn Eats Goood Newsletter is all about efficiency, without boredom or blasé repetitiveness. Jenn leans into meal prep in an admirable way with make-it-one-enjoy-it-all-week recipes like her popular Breakfast Biscuits, Chia Puddings, and Egg Muffins. Her debut cookbook comes out on January 13th, and I, personally, am so excited to see everything that she’s been working on. Unique IngredientsThere are some ingredients found in Jenn’s pantry staples that aren’t necessarily staples in the Restaurant Dropout pantry, per se. Enhancement OptionsYou can give the Tofu and Broccolini recipe more heft by serving it with a side of Jenn’s Steamed Rice. Alos, although great on its own, you can enjoy the Tomato-Basil Saucy Butter Beans with bread, or even stretch it by using it as a textured pasta sauce. Prep List

That being said, there were a few things in Jenn’s recipes that could be made on the day, while other parts of the dish bake or simmer. I’ve added those elements as optional prep on the list since they won’t add to the cook time if you made them on the day.
